ENZYMES 101, PART 1 - Enzymes, Nutrition and Your Health

I've been researching on why they now say that eating more"raw" (uncooked) foods are better for your health than cooked foods. Cooking, I found, destroys up to 80% of the nutritional value of the foods that you eat. This is especially significant, as today's lifestyle dictates that we consume the majority of our nutrition from cooked and processed foods. This means that our society now is now experiencing chronic malnutrition on a massive scale. This explains the reason why more and more people are getting sick at younger and younger ages.

Enzymes are in all foods that is provided to us by nature. Its the catalyst that helps us digest that particular kind of food. Enzymes are also the agents by which we absorb and utilize the nutrients from the food that we eat. Unfortunately, enzymes are destroyed by heat, so when we cook our food, we are practically depriving ourselves of this most vital of nutrients.
